Gran Hotel Montesol, Vara de Rey, Ibiza town

Summer 2021

Sabbaba has opened its doors in july 2021 in Ibiza, inside the Gran Montesol hotel, the very first hotel ever opened in Ibiza. This large restaurant (about 250 seats) is offering a levantine cuisine from israeli Chef Tomer Amedi.

Brother of Balagan restaurant in Paris, we have reused some of its codes : tiles handmade in the south of Italy, neon light, lava from Auvergne… but we have also created new codes inspired by Ibiza bohemia. For an exemple we have created a cave all made out of shells, starfishes, stones, crystals and cosmic stuffs, this cave is a private table for 12 to 15 people. We have also used tiles from the south of spain, light wood, patchwork quilts, moon fountains ….
